Vanilla Cupcakes
150g butter - softened
150g caster sugar
175g self-raising flour
3 eggs
1 tsp vanilla extract
Put 12 cupcake cases into a muffin pan
Put all ingredients in a bowl, mix well, divide between cases and bake at 170° for 30 mins or until firm.
TOP TIP: ovens vary - adjust the temperature lower to get flatter cakes, higher to get your cakes to rise more
Buttercream
125g butter - softened
250g icing sugar
1tsp vanilla extract
1Tsp hot water if required
Make sure butter is soft. Put butter and sugar in a bowl and cream until fluffy (use a mixer. It’s easier). Add vanilla extract
Add hot water if the consistency is still too thick
TOP TIP: use sandwich bags as piping bags if you can't find the real thing. Best colours for mixing are made by "sugaflair" and available online (not in supermarkets)
